Oysterleaf, also known as sea bluebells, can be found growing wild on the coast of Scotland and Shetland. The fleshy leaves of this low-growing shore plant are rich in flavor, which is comparable to oysters, anchovies, mushrooms and borage. The perennial plant flowers initially reddish and changes its flower color to light blue in early summer. Hardy perennial is very suitable for planting in rock gardens. Oysterleaf loves sunny locations and fresh, well drained, slightly sandy soils. Full sun. Grows to one foot tall. Photo courtesy of Hem Zaden.
